  1. Saute chopped vegetables and meat in pan with 1/2 tablespoon of coconut oil; place in side dish to add into omelet.
  2. Whisk eggs together until smooth add rest of coconut oil to pan, set to medium heat, allow oil to heat, pour eggs into skillet. Once eggs are set and almost completely solid add sauted ingredients (you can add a top to cover omelet if still runny) Scoop out omelet and serve
Recipe Notes

Variations: Go vegetarian and omit meat. Eggs are a complete protein which means they have all of the essential and non-essential amino acids necessary for muscle tissue growth and hormone production.
